Favourite Saturday Brunch

The Christmas decorations have been cleared away, the festive food is all gone and we’ve just made it through the first week back at work and deserve a treat.

We’ve put our heads together to share some of our favourite Saturday brunch dishes we will be enjoying this weekend…

Blueberry Pancakes

Breakfast shouldn’t be a complicated affair, and Jamie Oliver has created a pancake recipe that is both tasty and easy to make. Using just one mug, a mixing bowl and a whisk (no need for scales!), these American style pancakes can be made in under 15 minutes.

If a savoury brunch is more your thing, then Australian Blogger Not Enough Cinnamon has the perfect (and healthy!) recipe. Using smoked salmon, avocado and toast of your choice- we recommend sourdough- simply slice or mash the avocado, top with as much salmon as you like and add some salad for good measure.

Egg Florentine 

Whether poached, scrambled or fried, Eggs Florentine is a classic brunch dish that’s easy to make and full of flavour. If you’ve got some extra time and want to indulge, then Delicious Magazine have created a Grilled Cheese Eggs Florentine that looks stunning, but our favourite recipe comes from Martha Stewart using quick fried eggs, goats cheese and crisped spinach.

National French Toast

Another brunch classic - French toast is great for sweet and savoury fans alike. Dense bread is best for creating the tastiest recipe, we’ve gone with brioche and used a spot of double cream to make the egg mixture extra smooth.
